I am both a data scientist and a software engineer. There's one thing that you are wrong about: Scrum is equally unsuited to software engineering just as much as it is to data science, for all the same reasons that you mentioned. Scrum might work if your team is just producing a ho-hum website that has very little novelty, but for anything that relies on innovation I've found it to be very unsuited.
